THE PROCESS OF PANNING We have a big rotating stainless steel bowl called a panner, which is how we coat the nuts & small fruits. The items are put in the panner and as it turns around we ladle tempered chocolate in layer after layer. Once the pieces have enough layers of chocolate we throw in some cocoa powder to finish them. And thats how its done!
